Spring season is upon us! It's time to lighten the palate with these fresh and tasty cocktails

CARAJILLO
This is THE COCKTAIL of 2025- think vanilla expresso martini!
- 3 tablespoons decaffeinated cold brew coffee
- 3 tablespoons (1 ½ ounces) Licor 43
- 2 teaspoons (⅓ ounce) vodka (like Gray's Peak)
- ¼ oz grenadine
- Roasted coffee beans (optional)
Combine cold brew coffee, Licor 43, and vodka in a cocktail shaker with ice. Cover and shake until well chilled, about 20 seconds. Strain twice, pouring through a cocktail strainer and a fine wire-mesh strainer, into a rocks glass over a large ice cube. Garnish with coffee beans, if desired.

APRICOT FREEZE
- ½ oz white rum (like Tropic Palms)
- 1½ oz brandy (Like Herve)
- ½ oz apricot brandy (like Old Mr Boston)
- 2 Tbsp freshly squeezed lime juice
Shake all ingredients with ice in a cocktail strainer. Strain into chilled cocktail glass.

SOUR CHERRY GIN SMASH
- 1 ½ oz. London Dry gin- such as Bartrams
- ½ oz. fresh lemon juice
- ½ oz. maraschino liqueur
- 2 dashes orange bitters
- Garnish: Luxardo cherry
Add all ingredients to a cocktail shaker and shake until well chilled. Strain into a martini glass and add cherry.

LIGHT MARGARITA
- Kosher salt or coarsely ground sea salt
- ¼ cup silver tequila- we like Cavagave
- 1 ½ fresh squeezed limes
- ½ medium orange fresh squeezed juice
- 1 teaspoon light agave nectar
- 1 lime wedge or round, for garnish
1. Pour a layer of salt onto a small plate. Slice off a small piece of lime and run the wet edge of the slice along half of the rim of your glass. Dip the top of the glass into the salt. Add ice cubes to your glass and set it aside.
2. Fill a small cocktail shaker with ice. Pour in the tequila, freshly squeezed lime and orange juice and agave nectar. Put on the lid and shake for 30 seconds. Strain the liquid into your glass and garnish with a slice of lime.

ELDERFLOWER WINE SPRITZ
- 4 ounces chilled white wine- we like Korta Tre Sauvignon
- 1½ ounces Elderflower Liqueur
- 2 ounces seltzer water
- lemon peels for garnish
1. Fill a glass with ice.
2. Add wine, elderflower liqueur and seltzer. Stir.
3. Garnish with lemon peel and serve.

RASPBERRY GIN RICKEY
- 1 cup sugar
- 1 ½ cup raspberries
- 1 cup fresh lime juice
- 12 ounces gin- we like Balfour
- 4 cups club soda
- 2 limes
- Ice
1. In a small pot, combine the sugar and 1/2 cup water. Heat over medium-high heat until the mixture comes to a boil and the sugar dissolves. Remove from heat and allow to cool, approximately 10 minutes.
2. Meanwhile, slice your limes and muddle 2-3 raspberries in the bottom of each serving glass.
3. Add 2 Tablespoons lime juice, 2 Tablespoons simple syrup, and 3 Tablespoons gin to each glass, add several raspberries. Top with 1 cup of ice and 1/2 cup of club soda.
Garnish as desired, with lime slices and additional raspberries.
